Research: The digestive process in the human gastrointestinal (GI) tract is a complex interaction of chemical and mechanical effects. The major goal of my research is to develop a quantitative description of the food digestion process in the GI tract using computational fluid dynamics (CFD) simulation. The computational results can provide accurate and detailed insights into the fluid dynamics behaviours of gastrointestinal contents in the GI tract. Combined with the experimental results of particle disintegration kinetics, it can give a quantitative description of the food digestion process and greatly further our understandings of the bioavailability of nutrients and pharmaceuticals in human GI tract.
