Using Engineering Approaches to Understand Gastric Digestion
Gastric digestion of food is a complex process that is controlled my many physiological and meal-related factors. However, to optimize functional food and pharmaceutical design, it is crucial to have a fundamental understanding of digestion processes. In this presentation, we will examine questions such as: Does gastric mixing matter? Does your meal influence the passage of a tablet? Does the location of a pathogen in your stomach influence its survival?
